There are many variations and recipes for making adobo in different cultures, and Filipino adobo recipes also vary in different regions of the Philippines.

Common adobo-style dishes include: Meat, seafood, or vegetables are simmered into a stew, usually with vinegar, soy sauce, garlic, bay leaves, and black pepper, and served over rice. But for adobo in the Philippines, places like the Visayas and Southern Luzon have their own regional styles, depending on the ingredients available in the area. Just vinegar and no soy sauce,” reports the outlet, and is considered by some to be “the original native style of Filipino adobo.” In southern Luzon, "creamy adobo with coconut milk is more popular," the outlet said.

NationalWorld also notes that Google Doodle artist Anthony Irwin on March 15 has a special sensitivity to cultural ties when it comes to food.

As an adult, Irwin said he's looking for ways to be proud of his culture and heritage. Filipino food connects his mother's identity with his own.
